Problems, parts and running costs

Summary

A floor-model chamber vacuum sealer for commercial kitchens, with two 20 in seal bars, a 1.5 HP rotary oil pump and gas flush for inert gas. Check the power and the oil before you buy: it pulls 1430 W on a NEMA 5-15P plug, and it ships dry, so the pump needs oil before the first cycle.

Strengths

  • Owners report fast cycles: one says a sealing cycle takes 25 seconds, another cuts sealing time to about a third.
  • Strong, repeatable seals in production use; one owner packs 100-150 dozen tamales a week without problems.
  • Gas flush is valued for charcuterie and cheese; one owner keeps product fresh with no oxidation for more than a month.
  • Chamber pouches cost less per bag than bags for an external sealer.
  • Parts support is unusually good for a commercial unit: the manual lists part numbers for the pump, seal bars, domed lid, gasket, valves and control boards.
  • Quiet in operation, and owners call it easy to use and clean.

Weaknesses

  • Support is the sharpest complaint: one reviewer described the technician as condescending and ill informed, and would have rated the machine higher otherwise.
  • Gas-flush dosing is hard to control; one owner cannot get a true pillow pack, only a small gas addition that reduces product crushing.
  • Bags can slide off the seal bar, and owners want more movable clips inside the chamber.
  • It ships dry, so skipping the oil on day one damages the pump.
  • No independent lab test exists, so nobody has published a measured vacuum level, seal strength or pump-down curve.

Sealing and throughput

Two 20 in seal bars sit 16.75 in apart inside a 21.25 x 20.75 x 7 in chamber, and a cycle runs 20-40 s. Owners call the machine quiet, easy to use and easy to clean, and they like that chamber bags cost less than bags for an external sealer.

The pool is small, so it cannot support a failure rate, and no pump or seal failures show up in it. What it does support is a consistent owner record of strong seals and fast cycles. Nobody has measured the vacuum level or seal strength, so treat seal quality as an owner report rather than a lab result.

Gas flush

Gas flush is not self-contained. You need a cylinder, a regulator and a hose, and the regulator must never go above about 14 psi; VacMaster recommends 5-12 psi. Owners use the flush with inert gas for charcuterie and cheese, and one of them reports product staying fresh with no oxidation for more than a month.

Dosing is the hard part. One reviewer says the gas-flushing function is a little difficult to control and that they cannot get a true pillow pack, just a small gas addition to reduce product crushing. An owner on the manufacturer’s own product page notes that outgassing can diminish the vacuum. WebstaurantStore’s buyer Q&A also advises chamber-type, mesh-less bags whose open end is no wider than the seal bar.

Running costs and upkeep

Running costs are consumables rather than subscriptions: chamber pouches in 3, 4 and 5 mil with zipper and re-therm variants, pump oil at about 8 fl oz per change, a gas cylinder and regulator if you use the flush, bone guards for sharp items, and the seal wire, seal tape and fuses in the maintenance kit. WebstaurantStore stocks a replacement 1.5 HP pump and motor (part 979320) and a 20 in seal bar (part 979500) for this machine, and VacMaster’s parts list covers the domed lid, lid gasket, hinge set, seal bar assembly, chamber assembly, pistons, solenoid valves, control boards, power cord, casters, fuses and gauge.

Upkeep runs on a schedule. Check the oil level in the site glass often and keep it between half and three-quarters full. The 2025 manual calls for the first oil change after one week of use and then every 3 months or 250 cycles; the 2015 manual says the first change after 25 hours and then every 60 hours. Check the exhaust filter every 6-12 months and replace it when it is dirty or saturated. Replace seal wire and seal tape once they are heavily discolored or torn, and keep the lid gasket, seal bar and chamber clean without acetone or abrasives. The two 20 A fuses on the heating transformer are user-replaceable. The lid lock is for storage only and has to be released before a cycle.

Is it worth it?

VacMaster’s own store lists the VP545 at $3,579 and WebstaurantStore at $3,199, both out of stock on 2026-10-21; BestNaturalBBQ lists it at $3,579.95 for lower 48 shipping only.

This is a capital purchase for a working kitchen, not a household appliance. If you need dual 20 in bars and gas flush, the owner record supports the money: production kitchens run it without reported pump or seal failures, and owners say they replaced units costing twice as much with no regret. The main risk that is not price is support responsiveness, given the complaint about tech support.

Which model this is

This page covers the VP545, the floor-model chamber sealer sold by ARY, Inc. under the VacMaster name and listed by WebstaurantStore as MFR # VP545C. It is not the tabletop VP-series such as the VP95, VP210, VP215 or VP320, and it is a different machine from the VacPak-It VMC20FGF. Two manual generations exist: a 2015 revision whose parts list names a Busch vacuum pump (part 978042), and a January 2025 revision of 28 pages that specifies the 1.5 HP rotary oil pump. The documents disagree on small points: pouch count (60 on the product page, 100 in the manual), maximum bag size (16 x 16 in on the product page, 16 in W x 18 in L in the how-to, 18 x 22 in on the spec page) and power draw.

The listing is ASIN B00B1GLQZ0.
