Summary
The VP215 is an 84 lb countertop chamber vacuum sealer for liquids, sous vide and game processing, listed by US dealers at $949.00-$1,432.48 (2026-10-05). Check the warranty before you buy: KaTom states the one-year warranty is not honored for residential use.
Strengths
- The chamber pulls air from the whole chamber, so liquids, soups and marinades seal without the floating bags you get from edge sealers.
- A double seal wire on a removable 10 in bar covers you if one wire has a temperature variation.
- Vacuum, seal and cooling times are adjustable, and settings persist between cycles.
- Forum owners report 3-year and 10-plus-year units with no issues beyond oil changes.
- The manual publishes a full parts breakdown with part numbers, and owners report spare parts are available.
- Owners describe it as quiet relative to other chamber machines.
Weaknesses
- Oil must be added before first use or the pump is damaged, and one owner reports a unit arriving on its side with the oil drained out.
- The oil schedule is a first change one week after use, then every 3 months or 250 cycles — on an 84 lb machine.
- Retailer reviews of heavy commercial use report pump-seal, drive-key and vacuum-leak failures, several near the end of the one-year warranty.
- KaTom states the warranty is not honored for residential use, while dealers market the machine for home sous vide.
- The 10 x 13 in max pouch size and the lack of a canister accessory port limit some owners.
- The manual says 20 Amp while distributors say 4 amps at 110/60/1, so verify your circuit before buying.

Chamber design and liquids
The chamber is the point. Instead of pulling air from inside the bag like an edge sealer, the VP215 evacuates the whole chamber, so the bag is squeezed from all sides at once. That is what makes liquids, soups, marinades and sous vide bags work. One owner in r/sousvide reported a half onion looking freshly cut after four days in a bag. Sizzle and Sear’s 2019 review describes sealing three steaks for sous vide that came out tightly compressed. If you only seal dry goods into edge-seal bags, this is the wrong machine.
Oil and maintenance
The manual states in block capitals that you must add oil before use and that failure to do so will damage the pump. Fill to 10-12 oz, a level of 1/2 to 3/4 inch in the site glass. The first oil change is due one week after use, then every 3 months or 250 cycles. VacMaster’s help center says roughly twice a year, and dealer copy gives a different schedule again — first change after 25 hours then every 60 hours — so the manual’s numbers are the ones to plan around. One owner reports VacMaster tech support telling them to change oil every 3 months regardless of use. The Rational Kitchen states the oil change “can be tough to do on an 80 pound chamber vac”. Check the oil level and color on arrival and often after: cloudy, dark or milky oil means a change is due. Sealing liquids without enough headroom is a real pump-damage path — one r/sousvide owner reported the oil going cloudy then milky within the first bags, from pulling too hard a vacuum on liquids and boiling them. Allow 1-2 in of headspace (3 in per the older manual) and chill liquids before sealing. Seal time adjusts in 0.1 second increments: reduce it if the seal turns white or milky, increase it if the seal is spotty. Set cooling time to twice the seal time to protect the seal bar, and store the machine indoors at 65-75 degrees.
Reliability, repairs and warranty
The evidence splits by user type. In WebstaurantStore’s owner review pool, heavy commercial users report a motor seizure inside 30 days (ARY repaired rather than replaced, and the retailer posted a public apology), a vacuum leak confirmed by ARY at 15 months, pump seals failing after about a year of light domestic use, and a motor-to-pump drive key breaking twice. The same pool carries operators reporting flawless performance after 16 months and no issues after 5 years. In the owner forums, where use is lighter, the reports are uniformly positive: a Rokslide owner with a 10-plus-year unit calls it the finest purchase he has ever made, a Big Green Egg Forum owner reports 3+ years with no issues, and a Pitmaster Club owner says the only way you can get his is to pry it out of his cold dead fingers. Nobody has published a failure rate, so treat the pump cluster as a known risk rather than a defect.
Repairability is better than some reviews claim. The manual publishes a full parts breakdown with part numbers — pump/motor 979214, air inlet filter 979144, main board 979129, relay timer 979136, sealing transformer 979240, control transformer 979139, vacuum gauge 979126, seal bar assembly 979200, hinge set 979252, 15 A fuse 979209. That contradicts the review claiming no parts are available and that the only route was an imported replacement pump. Both can be true: the catalog exists, but no part is priced or sold on the pages checked, and no source confirms a pump rebuild kit.
The warranty needs attention before purchase. ARY’s terms are a limited one-year warranty from receipt of goods, covering defects in material and workmanship, with repair, replacement or refund at ARY’s option. Claims must be made in writing within one year or are waived, and the warranty is void for repairs made by anyone other than ARY. KaTom adds that the warranty will not be honored for residential or non-commercial use — while ARY’s own page markets the machine for home sous vide and hunting, as do several dealers. Confirm that in writing before you buy.
Is it worth it?
If you seal liquids, sous vide, game or fish, the chamber design does something edge sealers cannot, and the long-term owner evidence backs it. If you only seal dry goods, a cheaper edge sealer does the job. The running cost is proprietary chamber pouches — ARY sells them in 1000-count cases, with a 6 x 10 in case at $55.00 list / $47.96 at Wasserstrom (2026-10-05) — plus periodic oil. Independent commentary puts bag cost at 3 to 10 cents each. At the low end of the dealer range ($949.00 at KaTom, $999.95 at BestNaturalBBQ, $1,037.68 at Wasserstrom, $1,069.00 at WebstaurantStore, all 2026-10-05) the machine undercuts the VP320 at $1,709-$2,199 and the VP230 at $1,429-$1,499 from the same retailer. At $1,390.00 (Kafsupplies) or $1,432.48 (Central Restaurant) you are paying distributor pricing while the residential warranty question is open. Note that WebstaurantStore’s own pages show the VP215 at both $1,069.00 and $949.00, so confirm the checkout number.
Which model this is
This page covers the VacMaster VP215 chamber vacuum sealer, product code VP215, UPC 054202922158, made by ARY Inc. It is sold under distributor codes including Central Restaurant SKU 234-013, WebstaurantStore 120VMASVP215, Rocket Industrial ARY-VP215-EA and KaTom 953-VP215. Do not confuse it with the VP210, which has a maintenance-free 2-cylinder piston pump and no oil schedule, or with the VP220, VP230, VP320 and VP800. VacMaster’s help center says the VP215 pulls a stronger vacuum “maybe 5-6 seconds” faster and is recommended for high-volume users. WebstaurantStore also lists it as the “VP215C”; whether that is a separate revision is unconfirmed.
