Summary

A lightweight 8-inch Japanese gyuto with a VG10 cutting core and a 16° edge, built for cooks who slice rather than pry. The thin edge chips under sideways force, so treat it as a delicate knife and keep it out of the dishwasher.

Strengths

  • Light and agile, the 184 g blade slices meat and fish cleanly.
  • VG10 sits only at the cutting edge, not through the whole blade.
  • The textured PP/TPE handle needs no oiling and stays easy to clean.
  • Shun offers lifetime factory sharpening for eligible knives.
  • Authorized US dealers stock the exact VB0706.

Weaknesses

  • The 16° edge chips under sideways force, and owners report chipped tips.
  • Two owners describe the handle detaching, which is an immediate injury risk.
  • Some owners call the polymer grip cheap-feeling at this price.
  • It is not dishwasher safe and must stay out of frozen food and bones.
  • Factory sharpening is free, but the mail-in return shipping costs $15.

The edge and the composite blade

Shun joins a VG10 cutting core to a softer Japanese 420J upper section with a brazed, interlocking seam. The maker calls this Composite Blade Technology. The wavy metal join is a deliberate design feature, not a cosmetic finish. The “3 layer” label describes the lower cutting section only; the blade is not dozens of Damascus layers. If you dislike the look or concept of a two-metal blade, a full-length mono-steel knife will suit you better.

Chips, tips and handle failures

A December 2023 r/chefknives owner of this exact knife described a chipped tip during normal home cooking, with carrots among the hardest foods cut. Commenters suggested lateral twisting during a Western rocking motion, but no controlled diagnosis confirmed the cause. Another 2019 owner called the Sora edge chippy. Two reports do not establish a failure rate. Stop using a knife whose handle has come loose and ask Shun to evaluate it under warranty.

Care, sharpening and running costs

Hand wash and dry after every use, and use a medium-soft wood board rather than glass, stone or ceramic. Regular gentle honing and periodic sharpening keep the edge alive; Shun suggests many home cooks sharpen roughly once or twice a year, though that is not a measured interval. The factory sharpening service is free when eligibility conditions are met, but each US mail-in shipment carries a $15 processing and return-shipping fee, and you pay the outbound postage and packaging. If you sharpen once a year, budget at least $15 a year in stated manufacturer-side fees. A Shun honing steel costs $49.95 (Shun, 2026) and a Shun 1000/6000 whetstone costs $99.95 (Shun, 2026). No electricity, batteries or subscriptions are involved.

Is it worth it?

US listings checked in October 2026 cluster at $99.95–$109.95. Home Depot lists the exact VB0706 at $99.95 (2026), and KnifeCenter and Shun direct list it at $109.95 (2026); Shun’s own page showed out of stock. At $80 or below delivered the knife is unusually appealing for a new, authentic VB0706 with a US warranty. At $96–$110 it is reasonable only if Japanese VG10 slicing and Shun service matter to you. Above $110–$120, the $67 Victorinox Fibrox 8-inch is a tougher, grippier workhorse, and the $18.99 Mercer Millennia M22608 suits budget buyers.

Which model this is

This page covers the Shun Sora VB0706, an 8-inch gyuto with UPC 087171042992 in KnifeCenter and Everything Kitchens data. It is not the more expensive Shun Classic DM0706, and it is not the 6-inch VB0723 or the 7-inch santoku VB0718. Match on VB0706 before buying.
