Mercer Culinary Genesis Short Bolster Chef's Knife 8 in (M21078): problems, parts and running costs

Checked: 2026-10-19

Summary

The Genesis short bolster is a forged 8-inch chef’s knife whose steel is soft enough that it needs frequent resharpening, and whose remaining bolster still gets in the way of sharpening to the heel. Keeping it running costs little beyond sharpening: professional sharpening runs about $7 per knife, or a whetstone of your own, plus an optional knife guard. It is a strong buy at $45 or less, fair through $60, and weak above $80.

Common problems and fixes

Parts and consumables

No replaceable parts or consumables reported.

Yearly running cost

There are no consumables and no electricity. The main annual cost is sharpening: Reddit owners report professional sharpening services at about $7 per knife, so a few professional sessions a year stay in the low tens of dollars, and a whetstone used at home costs far less per session. The optional knife guard is a one-time accessory.

When it is a good buy

At $45 or less the forged full-tang build, NSF certification and limited lifetime warranty make it strong value. Prices from other stores, checked in October 2025: ChefsToys $53.99, Wasserstrom $49.37, Russell Hendrix $82.89 CAD (about $60-65 USD), Kitchencookstore $27.00 marked down from a $53.99 list, and Kitchencavo $39.50. Esquire’s December 2025 review framed it as the best knife-for-the-money at about $42. The Victorinox Fibrox and the Wüsthof Classic are the usual alternatives once the price passes $80, where harder steel with better edge retention becomes available.
