Summary
A countertop edge vacuum sealer for home cooks portioning meat, fish and sous-vide ingredients, with a double heat seal, a built-in bag-roll cutter and a hose port for jar accessories. Check the wet-food side before you buy: this is an external-suction machine, so liquid can reach the sealing line, and Target’s listing advertises a five-year warranty while Anova’s own terms say two.
Strengths
- Serious Eats ranked it first among 25 vacuum sealers and found the double seal intact through sous-vide water-bath testing.
- Shouldit measured 68 kPa peak suction in a 36-second dry cycle and sealed beef for sous vide on the first attempt.
- Double heat seal, roll holder, cutter and jar hose come in one box.
- Anova built it for more than 100 consecutive seals, and Serious Eats saw no mandatory rest between bags.
- Manual Pulse stops the pump before liquid reaches the seam.
- A published two-year warranty and a 100-day money-back offer on Anova’s own store.
Weaknesses
- Liquid can reach the sealing line: owners report marinade drawn into the bag mouth even in Moist mode.
- The juice channel is fixed, with no detachable tray, so cleanup means wiping the machine out.
- Shouldit’s test measured 83 dBA, with panel lights hard to read in bright light and no completion chime.
- A heavy automatic cycle crushed 40% of a 4.5 oz brittle test load.
- Anova’s replacement-parts storefront showed no products, so a replacement gasket has no public part number.
- Target’s listing says five-year warranty where Anova’s own terms say two years.

Sealing performance
The double heat seal is why Serious Eats preferred this machine after working through 25 vacuum sealers, and it held through prolonged sous-vide water-bath testing. That 68 kPa is one laboratory result, not a promise about every bag.
Moisture and debris are the weak point. A December 2024 owner in r/sousvide reported cheese packets letting air back in within hours even with dry contents, and replies pointed at micro-punctures, folds, crumbs, grease in the seam and bag ends that were not sealed flat. Nobody has published a leak rate for this model, so treat it as a known annoyance rather than a defect — but inspect both ends of a test bag and leave it for a few hours before you fill a freezer drawer with costly food.
For fragile food, use Pulse instead of automatic vacuum. Shouldit broke 1.8 oz out of a 4.5 oz brittle test food in automatic Dry mode, which shows the pump can crush what it is not meant to touch. Stop the vacuum by hand and press Seal once the bag looks tight enough.
Wet food and cleanup
An edge sealer pulls air through the bag mouth, and liquid follows the air. A 2024 owner sealing mostly frozen steak still saw liquid reach the open bag lip in Moist mode, and a May 2024 owner reported stopping the machine by hand when marinade got in the way. That is what an external suction sealer does with wet food, not an electronics fault: pre-freeze liquid portions, blot the bag mouth and use Pulse rather than waiting for a full automatic cycle.
Cleanup is the second cost of that layout. There is no removable, dishwasher-safe drip tray; the groove that catches escaped liquid is moulded into the machine. If you vacuum a lot of marinated meat, keep the bag mouth where the liquid cannot run and wipe the channel dry after every session.
Bags, parts and running costs
Bags are the real running cost. Anova’s own Precision Vacuum Sealer Rolls ANBR01 come as two 11 in × 19.6 ft rolls, 39.2 linear feet in total, for $23.00 on Anova’s US store, $22.96 at Sur La Table and $27.99 at Kohl’s. Cut from that stock, a 12-inch bag costs about $0.587 of film. 100 bags a year burn roughly $58.67 of roll material, and you buy three whole packages at $69.00 to cover them. Electricity is noise beside that: at the 110W nameplate and 40 seconds per cycle, 100 cycles a year work out to 0.122 kWh, about $0.024 a year at an assumed $0.20 per kWh.
There are no filters, cartridges or subscriptions to buy for the machine itself. The manual says a damaged heating element belongs with a professional, and the warranty excludes unapproved internal repair, so plan on service rather than a weekend fix.
Warranty and support
Anova’s published limited warranty covers material and workmanship defects for two years from receipt for the original purchaser in the US and Canada, and says Anova pays shipping both ways once eligible service is approved. Anova’s own storefront also advertises a 100-day money-back offer, which is a different thing from the repair guarantee. Target’s page advertises a five-year warranty, but Anova’s product page, manual and legal warranty page all say two years, and nobody has produced a written certificate for the extra three years. If the longer warranty decides your purchase, get it in writing from the seller first.
Support is not everyone’s smooth experience. Those are individual complaints rather than an average, and they say nothing about whether the written warranty covers your case. Email support@anovaculinary.com is the documented route.
Is it worth it?
Anova sold the Pro for $114 in October 2026, and Target listed the exact ANVS02-US00 at $100.99, marked down from $109.99, with a 90-day standard return period. A Serious Eats outbound offer put Sur La Table at $114–115 when it was published, though that figure was not verified at checkout, and Best Buy’s page showed $154.99 sold and shipped by a third party. At roughly $100 to $114 you get the double seal, the cutter and the jar hose; above $126, weigh it against the NESCO VS-12P at $149.99 if a dedicated Gentle preset and a serviceable parts catalog matter more than sealing a batch without a rest.
If you vacuum a few freezer bags a year and never need the cutter, the roll compartment or the jar hose, the base Anova Precision Vacuum Sealer was $74 at Target. If soups and marinades are the point, the Anova chamber sealer at $374 is the machine built for liquids.
